Wallace Edwards & Sons, has been producing traditionally cured Virginia Hams since the 1920’s. In the early days, the ham was sold locally in great ham sandwiches and in better hotels in the area. The beauty of great oyster mushrooms lies in their subtle, rich flavors and their beautiful colors. Both of those qualities are easily lost when purchasing these items commercially. As fate would have it, however, in the nearby town of Sedley live Dave & Dee Scherr. Their passion is cultivating these beautiful fungi and turning folks on to the fruits of their labors! Lately they have begun serving as local intermediaries for small scale organic farmers throughout the region producing everything from great squash to elephant garlic or even great fresh organic berries! We are always looking forward to what they will bring in next.

We have discovered an impressive array of local cheese producers and have been uniformly impressed with their quality. From the small town of Galax, Virginia comes Meadow Creek Dairy. Raising Jersey dairy cattle for more than 30 years, they produce more than one outstanding cow’s milk cheese that we are proud to serve on our cheese menu. From a little further south we have discovered Sweet Grass Dairy in Georgia, producing both cows’ milk and goats’ milk cheeses. We will add to these offerings other amazing domestic cheeses from further west so that we can always present the very best products we can find.
